Mexican Corn Bake and Hot Mexican Cheese Squares

Cruiser get-togethers are one of the things that makes this lifestyle so enjoyable. You meet people from all over the world and from every walk of life who have a variety of dreams and goals. Learning and helping one another is so valuable when you are sailing a boat in unfamiliar waters. Sharing experiences enriches the lives of cruisers by providing a connection that is so necessary when you are away from most of the people back home that you know and love.

Taco Tuesday has become one of the many social events we have experienced in Grenada. One or two boaters will host a taco night on a boat providing the taco fixings while fellow cruisers bring sides and beverages to round out the dinner. After two such nights, I have been asked for two recipes, Mexican Corn Bake and Hot Mexican Cheese Squares. Thus, I am posting both recipes for your enjoyment. They are tasty and simple to make.

 

Mexican Corn Bake

Ingredients

2 tsp butter

8 oz cream cheese

2 cans corn (drain well)

4oz can green chilies chopped

Cayenne pepper to taste

¼ tsp salt

¼ tsp ground pepper

¼ tsp garlic powder

1/4-12 c of grated cheese to cover the top

Instructions

  1. Using a casserole dish, melt butter/cream cheese in microwave (or low temp oven). I usually let the cream cheese soften before using so that the “melting” takes less time.
  2. Mix in remaining ingredient (except grated cheese).
  3. Bake 350 uncovered 15-20 minutes. Then top with grated cheese.
  4. Bake for 5-10 more minutes until bubbly.
  5. Serve warm.

 

Hot Mexican Cheese Squares

Ingredients

4 eggs, beaten (salt and peppered)

1.5 c shredded cheddar cheese*

1.5 c shredded Swiss cheese

1/4 c diced onions

1/4 c diced, canned jalapenos (juices drained)

Instructions

  1. Preheat oven to 350 degrees F. Spray an 8 x 8 inch baking dish with nonstick cooking spray.
  2. Cover bottom of baking dish with jalapenos.
  3. Cover peppers with cheeses.
  4. Pour eggs over the cheese mixture.
  5. Bake for 30-40 minutes until firm and lightly golden brown on top.
  6. Cool completely and cut into 12 squares.

*If Swiss cheese is not available, using 3 cups of cheddar cheese will work fine!
