A few people have asked me for this recipe. So I thought I’d add it to the blog for all to use. I started making these in Dominica after reading the book The Embarrassment of the Mangoes by Ann Vanderhoof. I even made them for one of the fruit vendors in Grenada after he sold me some papaya. He raved about them. They are a moist treat whether you eat them for breakfast or just as a mid-day snack.

12 muffins
1 2/3 c flour
1 t baking powder
1 t baking soda
¼ t nutmeg
½ t salt
1 egg
1/3 c veg. oil
¾ c sugar
1 c mashed ripe papaya
½ c mashed ripe banana (1 large; 2 small)
¼ c pecans (optional)
Preheat oven 375
Grease 12 muffin tins
Combine dry ingredients
Beat egg with oil, sugar and papaya and banana in large bowl
Add dry ingredients and walnuts; will be thick but if too thick add 1-2 t of water and mix
Scoop into muffin tins
Cook in preheated oven for 18 min
Don’t overcook and they will be moist and yummy!
