One pot meals on a boat can be efficient in more ways than one. First you only need one burner. Second, one pot meals use less dishes which in turn reduces water consumption. Third, single pot meals are quick and simple after a long sail or a day of sightseeing/snorkeling. Fourth, these easy meals keep the heat down in the cabin which is great in tropical environments. Finally for us using the propane stove rather than any other cooking device, such as an instant pot, saves on battery consumption when you find yourself on a cloudy day without solar and a broken generator. This is our situation today!
One of our favorite one pot meals uses smoked sausage which seems to be available all over the Caribbean. Any kind of smoked sausage cut in to 1/2 to 1 inch slices works well. If the sausage has a tough outer casing, I sometimes take this off before cooking.

Ingredients
1 13 oz package of smoke sausage cut into bite-size pieces
1 t vegetable/olive oil (if needed, with most sausage extra oil is not needed)
1 yellow onion diced
3-4 cloves garlic minced (or 1 tbsp minced from a jar)
2 c chicken broth
1/2 c milk/cream (cream seems to keep longer than milk in the fridge)
1/2 t Lawry’s seasoned salt or another seasoned salt of choice
8 oz bowtie noodles (or penne as pictured here or similar pasta)
2 cups frozen broccoli florets
2 oz grated parmesan cheese
salt and pepper (to taste)
Instructions
- In a large skillet with a lid, cook sausage until browned.
- Add diced onion, minced garlic and cook until onion is softened.
- Stir in chicken broth, milk/cream, seasoned salt, noodles.
- Bring to a boil. COVER and reduce the heat to low.
- Continue to simmer for about 10 minutes or until the liquid has reduced.
- Add broccoli and cook until the noodles are cooked through and broccoli is crips tender, about 4-5 min. more.
- Take off heat and stir in grated parmesan cheese! Serve with bread of choice!
