This is a super easy recipe that makes for a good passage snack, a topping for a salad, or an appetizer for a party. I have found frozen shrimp readily available in the Caribbean. So I try to keep a package ready in the freezer. Hope you enjoy!
Marinated Shrimp
- 3 tablespoons minced garlic
- 2 tablespoons extra-virgin olive oil
- ¼ cup lemon juice
- ¼ cup minced fresh parsley (fresh is best, but in a pinch you can use dried)
- ½ teaspoon kosher salt
- ½ teaspoon pepper
- 1¼ pounds cooked shrimp (I usually use frozen shrimp)
Place garlic and oil in a small skillet and cook over medium heat until fragrant, about 1 minute. Add lemon juice, parsley, salt and pepper. Toss with shrimp in a large bowl. Chill until ready to serve.
