Instant Pot Baby Back Ribs

I am always looking for easy recipes that I can cook on the boat. It is a plus if the cooking method doesn’t heat up the cabin and only uses a few dishes. When I snagged some Brazilian baby back ribs from the grocery store for a decent price, I decided to try the instant pot to cook them. We were all pleased with the results. Thus, I am sharing the recipe for your enjoyment!

Instant Pot Baby Back Ribs

Ingredients

  • 3 lbs baby back pork ribs
  • ¼ cup brown sugar
  • 1 tsp chili powder
  • 1 tsp dried parsley
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder,
  • 1 tsp onion powder,
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 cup water
  • ½ cup apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 1/2 cup BBQ sauce

Instructions

  1. Remove the membrane from the bottom side of the ribs by running a butter knife under the skin and using a paper towel to pull it completely off.
  2. Combine brown sugar, chili powder, parsley, salt, pepper, garlic powder, onion powder, paprika and cayenne pepper in a small dish. Rub all over the front and back of the ribs.
  3. Place the trivet in your pressure cooker and pour in water, apple cider and Worcestershire sauce.
  4. Position the ribs on the trivet, standing them on their side and circling around the inside of the pot. Slabs can circle inside each other.
  5. Secure the lid, making sure the vent is closed. Set time for 25 minutes. When finished cooking, let the pressure naturally release for 10 minutes; then quick release the rest of the way.
  6. Optional finish (but not necessary): Gently remove the ribs from the pressure cooker and set on a foil lined baking sheet. Brush with BBQ sauce. Broil for about 3-5 minutes 6 inches from top of oven. Keep watch so they do not burn. Enjoy!
