Broccoli Cauliflower Bacon Salad

Along with  the previously posted Cabbage Apple Coleslaw, this is another of our favorite vegetable salads: Broccoli Cauliflower Bacon Salad. Salads make good passage food as well as nice side dishes in the hot Caribbean. Whenever, I cook bacon, I try to freeze a few slices so that I can easily make this salad or if you go to the States you can order a package of Hormel Black Label Fully Cooked Bacon from Amazon. This bacon is super thin and can be heated in the microwave for 30 seconds (or on the stove), so that it is crunchy. It is easy to transport in your luggage because it does not need  refrigeration until opened. We always bring some back with us or have others who visit bring it with them. Hope you enjoy this salad as much as we do!

Broccoli Cauliflower Bacon Salad

Ingredients

Salad

2.5 cups broccoli florets

2.5 cups cauliflower florets

1/2 red bell pepper diced

4 oz cheddar cheese cubed

7-9 slices of cooked bacon (or 14 slices of pre-cooked bacon)

2 tbsp purple onion diced

Dressing

3/4 cup mayonnaise

3/4 cup sour cream (or Greek yogurt)

2 tbsp sugar

1 tbsp lemon juice

Instructions

  1. Toss the salad ingredients together
  2. Mix dressing ingredients in a separate small bowl.
  3. Stir in the dressing with salad ingredients.
  4. Refrigerate and serve.

Refrigerate any leftovers up to 5 days.
