This is one of our favorite salads and it works great here in the Caribbean because we can almost always find the ingredients. In addition, the ingredients keep for a long time! So give it a try and you will be delighted!
Ingredients
Dressing
- 1/4 cup mayonnaise
- 1/4 cup sour cream or plain Greek yogurt
- 2-4 T honey
- 2 T apple cider vinegar
- ¾ t ground ginger (or nutmeg)
- Salt and freshly ground black pepper
Coleslaw
- 1/2small cabbage, shredded 1-2 cups
- 1/4 small red cabbage, shredded
- 1 1/2cups cup up or shredded carrots
- 2-3apples, cubed
- 1/2cup sliced green onions or purple onion
- 1/2cup dried cranberries
- 1/2 cup raisins, golden is best (optional)
- 3/4cup slivered almonds or chopped pecans (optional)
- Salt and pepper to taste
Instructions
- In a mixing bowl whisk together mayonnaise, sour cream/yogurt, honey, apple cider vinegar and ginger until smooth. Season with salt and pepper to taste.
- In a large bowl toss together cabbages, carrots, apples, onions, cranberries, raisins and, almonds/pecans.
- Pour dressing over cabbage mixture and toss to evenly coat. Refrigerate until ready to eat.
