Miracle Instant Pot Meatloaf and Mashed Potatoes

I call this dish Miracle Instant Pot Meatloaf and Mashed Potatoes because both items cook together in half the time as meatloaf in the oven. In no time, a delicious meal of meatloaf and mashed potatoes is ready without adding heat to the salon. Try this crowd pleaser tonight!

Ingredients

Meatloaf

  • 2 pounds ground beef
  • 2 large eggs slightly beaten
  • 1 c old fashioned oats
  • 1 small can of tomato sauce
  • ½ c of ketchup
  • 2 T Worcestershire sauce
  • 1 diced onion
  • ½ diced green pepper
  • ½ t minced garlic
  • 1 t salt
  • ½ t ground black pepper

 

Meatloaf Sauce (optional)

  • ½ c ketchup
  • 1 t Worcestershire sauce
  • 1 T brown sugar

 

Mashed Potatoes

  • 2-3 pounds potatoes, quartered
  • 1 cup water
  • 1/4 teaspoon salt
  • 1/4 cup milk/cream
  • 1/4 cup sour cream (optional)
  • 3 Tablespoons butter

 

Instructions

  1. Mix the meatloaf ingredients gently in a large bowl (without over-working the meat).
  2. Form the meat mixture into a round loaf that will fit into a 7-inch (3-inches tall) springform pan or make a round foil dish using two pieces of foil crisscrossed and edges folded upward together to form a nest for meatloaf. The edges should be high enough that the oil from meatloaf will not spill out while cooking.
  3. Spray pan or nest with cooking spray and place meatloaf inside.
  4. Put quartered potatoes in the bottom of the instant pot with 1 c water and salt.
  5. Lay the instant pot trivet on top of the potatoes. Place the springform pan or aluminum foil “nest” with the meatloaf on top of the trivet.
  6. Secure the lid on the pot and close the pressure release valve. Select manual/High pressure and set for 25 minutes.
  7. When the timer beeps, allow the pressure to naturally release for 10 minutes.
  8. While the meatloaf cooks, make the sauce by combining the sauce ingredients in a bowl.
  9. After natural release of 10 minutes, remove the IP lid, and carefully remove the meatloaf. Use tongs or hot pads. Do not let oil spill on you!
  10. Gently pour out the drippings and put sauce on top. Optional: Put meatloaf in oven to broil for a few minutes while fixing potatoes. Then, place on a heat proof platter and remove sides of springform pan or foil nest.
  11. To the potatoes in the instant pot, add the milk/cream, sour cream, butter, salt and pepper. Gently mash the potatoes to combine (but don’t over-mash). Adjust seasonings, as needed.
  12. Slice meatloaf and dish out potatoes! A hearty meal is ready to eat! Serve with a green vegetable or salad.
