Since St. Lucia is the Banana Island, I thought it was a perfect place to master making banana bread in the bread machine. Why the bread machine you ask? First, the machine can run off solar without the generator as it draws very little electricity. Second, it does not heat up the cabin like the electric or propane oven. Third, it mixes and bakes in the same pan causing less dishes to wash. So totally a win! Thus, I adapted an online recipe (thespruceeats.com) to make this moist, wonderful banana bread!
Bread machine Banana Bread
Insert into bread machine in this order:
½ T powdered milk with 2 T of water; or 2 T of milk
1/3 c butter (5+ T)
2 large eggs
1t vanilla
2 mashed ripened bananas
Add dry ingredient in this order to the bread maker:
1 1/3 c flour (optional: 1/2 T gluten if not bread flour)
2/3 c sugar
1 ¼ t baking powder
½ t baking soda
½ t salt
½ c chopped nuts
Place container in bread machine.
Mix on dough setting for 5-7 min. Use spatula to scrap sides and bottom. Turn machine off.
Change to bake setting for 1 hr and 10-15 min. until toothpick comes out clean.
When done scrape sides and dump from pan. Let cool.
